Phytase is a food grade enzyme derived from the fermentation of a selected Non-GMO strain of Aspergillus niger. It is used to hydrolyze (break down) phosphate residues from phytic acid (phytate).
Phytase has great value in feed, which can improve phosphorus utilization, decompose anti-nutritional factors, reduce phosphorus content of animal feces and alleviate pollution to the environment.

Enzymatic Properties
The pH optimum is 5.5 with a stability range from 3.0 to 6.5. The optimum temperature is 55℃ with a stability range from 40℃ to 60℃.
Activity
The activity is characterized by its ability to hydrolyze high molecular-weight pectin within the poly-galacturonic chain. One phytase unit (FTU) is the activity of phytase required to liberate 1 μmole of inorganic phosphorus per minute at pH 5.5 from an excess of 15 M sodium phytate at 37ºC under the conditions of the assay. The acceptance criteria for all enzyme assays is: NLT 85.0% and NMT 115.0% of the declared units of enzyme activity.
